The apples are shining

Even long, long ago in the olden days people could enjoy apples almost year round because if you treat them right they'll stick around and treat you right. They like to be kept cool and dry so any dark corner in your frig. will keep the crisp for your.

Good as any apple is, this time of year it is even better. They are coming fresh off the trees, full of juice, crunch and wonderful flavors. And they are begging to be eaten, cooked and enjoyed while they're at their healthy peak. So lets' oblige them.

Jan Anderson or Rautoul, KS wrote, "This is an especially good recipe for this time of year with apples in abundance. Growing up, my folks had an apple tree and Mom always had lots of apples to use in baking this cake. It is so moist that it needs no icing, but whipped cream is always good on top of a warm slice. It is a pretty dessert to serve company, yet it goes together quick and easy for a family meal."


MOIST FLAVORFUL APPLE BUNDT CAKE

Just slice and serve this quick and easy dessert or top with whipped cream, ice cream, or rum sauce.

3 cups all-purpose flour
2 cups granulated sugar
2 tablespoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chopped walnuts
3 eggs, slightly beaten
1 1/2 cu[s vegetable oil
2 tablespoons vanilla
3 cups cored, peeled and chopped apples

Preheat oven to 350F. Grease and flour a bundt pan. Sift flour, sugar, cinnamon, soda and salt together into a bowl. Stir in walnuts. In another bowl beat eggs and then beat in oil and vanilla. Stir into flour mixture and then stir in apples. Pour into bundt pan and bake 1 hour.


RUM SAUCE

This is a basic sauce that can be flavored with rum, brandy, lemon, orange or a combination of alcohols and fruits. If you would prefer a thicker sauce increase the flour or cornstarch. When using fruits add some of the zest of the peel as well as the juice.

1/2 cup granulated sugar, or more
2 tablespoons flour or 1 tablespoon cornstarch
1 cup water or orange juice
pinch of salt
rum, rum flavoring, almond or vanilla flavoring, almond or vanilla flavoring AND/OR Juice of 1 lemon
Orange of lemon zest
2 tablespoons butter

In a small saucepan combine sugar and either flour or cornstarch. To prevent lumps, gradually stir in liquid and salt. Bring to a boil and stir while simmering until starch taste is gone, about 5 minutes. Add lemon juice, zest and butter. Stir until butter melts; serve warm. Makes 1 cup.

APPLE BUNDLES

Refrigerated crescent rolls save you bundles of time.

2 large apple, peeled, cored, sliced and cut in half
1 can (8 oz.) refrigerated crescent rolls
2 tablespoons butter, melted
1/2 cup granulated sugar
1 teaspoon cinnamon
1 teaspoon orange rind zest
juice of 1 orange
.

Preheat oven to 375F. Unroll dough and separate into 8 triangles. Cut each triangle in half or make 16 triangles. Place 3 to 4 apple slices at wide end of each strip and roll up. Arrange the bundles seam side down in and 8 x 12-inch baking dish. Pour orange juice into baking dish around the bundles but not on top. Drizzle butter over the bundles. Mix zested orange rind, sugar and cinnamon; sprinkle over bundles. Bake 20 to 30 minutes, until golden brown. Serve with whipped cream, ice cream or an orange sauce (see above). Makes 6 to 8 servings.


GERMAN APPLE PANCAKE

3 eggs
3 tablespoons all-purpose flour
1 tablespoon granulated sugar
1/4 cup milk
1 tablespoon butter, melted
2 apples peeled, cored and thinly sliced
Lemon Sauce:
2 tablespoons granulated sugar
1/4 teaspoon cinnamon
1/2 stick (4 tablespoons) butter, melted
2 tablespoons lemon juice

Preheat oven to 325F. Beat eggs until thick and lemon colored. Combine flour and sugar and beat into egg yolks then beat in milk. melt butter in a 10-inch ovenproof skillet. Pour batter into skillet and cook slowly for 5 minutes. Quickly and evenly arrange apple slice on the top Slip into oven and bake 8 to 10 minutes. Serve with Lemon Sauce. Lemon Sauce: In a sauce pan melt 1/2 stick butter. Combine the 2 tablespoon sugar and cinnamon and then stir into butter when sugar has dissolve add the lemon juice. (Or the lemon can be squeezed directly onto the hot pancake and the butter-cinnamon sauce poured over all.) If you wish you can flambé either the pancake or the sauce with rum or brandy.
