Morning Glory Muffins

Ingredients:
1 1/2 cups sugar
2 1/4 cups flour
1 tablespoon cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup raisins
1 cup apple, finely chopped
2 cups carrots, finely shredded
1/2 cup pecans or walnuts
1/2 cup shredded coconut
1 (8 oz.) can pineapple tidbits
3 eggs
1 cup vegetable oil
2 teaspoons vanilla





Directions: Sift together sugar, flour, cinnamon, baking powder, baking soda and salt in large bowl. Add raisins, apple, pineapple, carrots, nuts and coconut to the dry ingredients, mix well. Beat eggs, add oil and vanilla. Stir flour mixture just until moistened. Spray muffing tins with non-stick cooking spray and fill to the brim. Bake at 350°F about 25 to 30 minutes. Makes 18.
