Banana Coconut Loaf

Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
3/4 cup sugar
1/2 cup vegetable oil
1/4 cup buttermilk
1 cup mashed bananas
1 teaspoon vanilla
2/3 cup shredded, flaked coconut
1/2 cup pecans, finely chopped
1/2 cup chocolate chips






Directions: Heat oven to 350°F. Coat a 9X5X3 inch loaf pan with nonstick cooking spray. Mix flour, baking powder, cinnamon, baking soda and salt in a bowl. Beat eggs and sugar in medium bowl. Beat in oil, buttermilk, bananas and vanilla. Make well in center of flour mixture, pour in egg mixture. Stir until flour mixture is moistened and batter comes together. Fold in 1/3 cup coconut, nuts and chocolate chips. Pour into prepared pan. Sprinkle with remaining coconut. Bake for 60 to 70 minutes or until inserted toothpick comes out almost clean. Let pan cool for 10 minutes. Turn loaf out onto a rack to cool.
