Oatmeal Rolls

Ingredients:
1 1/4 cups boiling water
1/3 cup shortening or oil
1/3 cup brown sugar
1 teaspoon salt
1 cup quick oats
1 package dry yeast
4 cups flour
1 egg, beaten












Directions: Pour boiling water over shortening, brown sugar, salt and quick oats. Let stand until lukewarm. Sprinkle yeast over warm water and stir until dissolved. Combine oat mixture with yeast. Beat until well blended. Add 2 cups flour and beaten egg, beat again. Add remaining flour a little at a time. Knead at least 10 minutes. Let rise about 1 1/2 hours. Punch down, form into rolls and let rise another 1/2 hour. Bake at 375°F for about 25 minutes.

Notes: This recipe was handed down by my grandmother and is always requested for family gatherings.
