Quick Muffins

Ingredients:
2 cups flour
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
3/4 cup miniature semi-sweet chocolate chips or chopped nuts
1/4 cup margarine
1/2 cup brown sugar
1/3 cup flour









Directions: Combine flour, sugar, baking powder and salt. In small bow beat egg, milk and oil. Stir in dry ingredients. Fold in chips or nuts. Fill greased and floured muffin tins 3/4 full. A topping can be added before baking. Mix brown sugar, flour and margarine. After batter is put in muffin tins, add a little topping on each muffin. Bake at 400°F for 12 to 15 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yields 1 dozen.

Notes: I like this recipe because it is quick to stir up.
