Honey Orange Bean & Vegetable Slaw

Ingredients:
1 ( 15 oz. ) can red kidney beans, drained and rinsed
1 ( 15 oz. ) can chickpeas, drained and rinsed
1 ( 15 oz. ) can green lima beans, drained and rinsed
2 cups red cabbage, thinly sliced
1 cup small broccoli florets
1/3 cup golden raisins
1/2 cup dried apricots
1/2 cup walnuts, chopped
1/3 cup cider vinegar
1/3 cup honey
4 tablespoons frozen orange juice concentrate
2 tablespoons canola oil
2 teaspoons poppy seeds







Directions: Combine kidney beans, chickpeas, lima beans, cabbage, broccoli, raisins, dried apricots and walnuts in a salad bowl. Set aside. Mix vinegar, honey, orange juice, canola oil and poppy seeds. Stir thoroughly and drizzle over vegetable mixture.

Notes: This is a very colorful and nutritious salad. Great for potluck dinners
