8 oz. vanilla wafers, crushed
1/2 cup sugar
1/2 cup butter or margarine, melted
4 eggs, well beaten
1 cup sugar
1 teaspoon vanilla
2 (8 oz.) packages cream cheese, softened
Directions: Crust: Mix together crushed vanilla wafers, 1/2 cup sugar and margarine. Press into bottom of 9x13 inch pan.
Filling: Blend eggs, 1 cup sugar, vanilla and cream cheese until smooth. Pour on top of crust. Bake at 375°F for 20 minutes or until firm. Cool cheesecake.
Variations: Add 1 cup mini chocolate chips to filling prior to baking or spread 2 cans of cherry pie filling on top. Serve with whipped cream.
Notes: This cheesecake was my Grandmother's recipe, and is a holiday favorite.
