Gourmet Potatoes

Ingredients:
6 (medium) potatoes
2 cups cheese, shredded
1/4 cup margarine
1 1/2 cups sour cream
1/2 cup green onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon paprika












Directions: Cook potatoes in skins. Cool. Peel and shred coarsely. Combine cheese and margarine in a saucepan. Heat until almost melted, stirring constantly. Remove from heat and blend in sour cream, onion and seasonings. Fold in potatoes and turn into a buttered casserole dish. Sprinkle with paprika. Bake uncovered in 350°F oven for 30 minutes.
