Pumpkin Roll

Ingredients:
3 eggs
2/3 cup pumpkin, canned
1 cup sugar
1 teaspoon lemon juice
3/4 cup flour
1 cup pecans
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon ginger
1 cup powdered sugar
1 teaspoon vanilla
1 (8 oz.) package cream cheese
4 teaspoons butter






Directions: Beat eggs for 3 minutes. Add all ingredients except pecans. Pour mixture into a greased and floured sheet pan. Sprinkle pecans on top and bake at 375°F for 15 minutes. When roll is done, turn out on a towel sprinkled with powdered sugar. Roll up in towel and refrigerate until cool. Filling: Mix together powdered sugar, vanilla, cream cheese and butter. Unroll the roll and spread the filling on the cake. Roll back up. Wrap in foil and refrigerate. Sprinkle top with powdered sugar before serving.
