Cranberry Pears

Ingredients:
1 (16 oz.) can whole cranberries
1 (8 oz.) can crushed pineapple
1 medium orange, pureed
1 medium lemon, pureed
1 cup carrots, chopped fine
1 large apple, chopped
1 cup walnuts, chopped
1/2 cup brown sugar
1/2 teaspoon salt (optional)
8 pear halves, fresh or canned
8 lettuce leaves









Directions: Mix everything but pear halves and lettuce leaves in large bowl. Store in 2 quart covered container in refrigerator. To serve, arrange lettuce leaves on chilled plates. Place pear halve on lettuce. Fill with cranberry mixture. Serves 8.

Notes: Scrumptious combination of fruits, vegetables and nuts. Eye pleasing first meal course.
