Ingredients:
2 cups pulp (butternut squash)
1 (medium) onion
1 cup Cheddar cheese, grated
1/2 stick margarine
1 cup celery bits
1/2 green peper
1 package stuffing mix
3/4 cup broth

Directions: Bake or boil one butternut squash (about 8 to 12 inches). Scrape out pulp, not too close to peeling. Simmer onion and green pepper in margarine until tender. Boil celery in water until partly tender. Mix all ingredients together and put in shell. Heat just before serving.
