1 (12 oz.) bag fine egg noodles
4 chicken breasts
2 jars chunky spaghetti sauce
4 egg whites
1 (8 oz.) package Ricotta cheese
3 tablespoons Parmesan cheese
1 (8 oz.) package Mozzarella cheese, shredded
Directions: Cook and drain noodles. Cook, bone, skin chicken and cut into bite-size pieces. Combine spaghetti sauce with chicken. In a medium size bowl, mix the egg whites, Ricotta and Parmesan cheese. Mix well. Spread 1/2 of the chicken sauce mixture in a 9x13 inch baking dish, sprayed with non-stick cooking spray. Spread 1/3 of cheese mixture. Place 1/2 of the noodles on top. Repeat layers. Top with Mozzarella cheese. Bake at 350°F for 35 to 40 minutes.
