Orange Ham

Ingredients:
1 (6 lb.) ham
1/2 cup whole cloves
1 cup brown sugar
1 cup apricot jam
2 cups orange juice
1 tablespoon zest
1/4 cup cornstarch
1/2 cup white sugar
2 oranges, sliced thin
1 bunch mint, spinach or parsley










Directions: Score ham and stud with whole cloves, 1/2 inch apart. Rub entire ham with brown sugar. Bake covered in oven at 350°F until inner temperature is 160°F or greater. Meanwhile, mix orange juice, lemon zest, cornstarch and sugar in a quart-sized saucepan and bring to a boil. Boil at medium heat for 5 minutes or until thickened. Reduce heat and save. Spread apricot jam over cooked ham. Return to oven at 350°F for 30 minutes. Remove ham from oven and serve on platter with orange slices and green leaves for garnish. Serve the orange sauce in a gravy boat. Serves 4 to 6 generously.

Notes: This is a good basis for a family dinner and the leftovers are a treat.
