Red Cabbage

Ingredients:
4 (medium) apples
1 (large) head red cabbage
salt to taste
1 1/2 cups sugar
2/3 cups wine vinegar
6 to 8 whole cloves
8 strips bacon













Directions: Peel and cut apples into quarters. Place in bottom of a large saucepan; shred cabbage and place on top of apples. Add salt, sugar, wine vinegar, cloves, bacon and a little of the bacon fat. Cover the pan and cook over very low heat, no water, for 3 to 4 hours or until cabbage is done. Serves 6 to 8.

Notes: Sugar and vinegar can be increased or decreased to taste depending on the flavor of the apples and cabbage. This is wonderful with pork.
