Mom's Potato Salad

Ingredients:
6 (medium) potatoes
6 eggs, hard-cooked
1 or 2 (medium) size onions, chopped
1 cup mayo
1 tablespoon mustard
2 tablespoons vinegar
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon paprika
1 teaspoon celery salt
1/4 cup dill pickles, diced
1/4 cup pimentos, chopped
1/4 cup green olives, diced







Directions: Cook potatoes in skins. Cool and then peel. Dice and set aside. Hard boil the eggs and then immediately cool in cold water. Peel eggs, reserving 2 for garnish. Dice the rest of the eggs and add to potatoes. Combine remaining ingredients in a mixing bowl and pour over potatoes and eggs. Mix thoroughly. Garnish with reserved eggs, sliced. Sprinkle with paprika.

Notes: All my life Mom has made this potato salad and only this one! To me, it is the best.
