1 cup flour
1/4 teaspoon salt
1/3 cup shortening
4 tablespoons milk
9 (approximately) peaches
3/4 cup sugar
4 tablespoons flour
1/2 teaspoon ground cinnamon
8 tablespoons butter or margarine, divided
Directions: First, for the pastry, combine the flour and the salt. Work in the shortening, then blend in the milk. Chill in refrigerator while preparing the peaches. Peel and slice the peaches. Cook them in a little water just until tender. Mix the flour with the sugar and the cinnamon and add to peaches. Then stir in the 4 tablespoons of butter and keep stirring until melted. Pour the peach mixture into a 10 inch square dish. Roll out the pastry dough and place it on top of the peaches.
Melt another 4 tablespoons of butter and pour this over the top of the pastry. Bake at 350°F for 40 to 45 minutes--until light brown.
Notes: This recipe is from a cookbook that a ladies fundraising group sold in the early 1960's for Oklahoma Christian College in Oklahoma City.
The lady who submitted it to that cookbook, says that it is originally from Arkansas peach country.
