Easy Enchilada Casserole

Ingredients:
1-1/2 lbs. ground beef
1 can enchilada sauce
1/2 cup onions, chopped
1 can (small) corn, drained
1 teaspoon minced garlic
3 cups tortilla chips, crushed
2 cups cheddar cheese
1 can refried beans, optional












Directions: Brown ground beef, onions and garlic, drain well and mix in corn and enchilada sauce. Layer in the bottom of a baking dish 1/2 the crushed chips, top with half of the meat mixture and then 1/2 of the cheddar cheese, repeat layers. Bake for 30 minutes at 350°F .

Notes: You can add a layer of refried beans after the first layer of meat, if you want.
