Chicken Pasta Salad

Ingredients:
1 (8 oz.) package rotini, uncooked
1 (11 oz.) can white shoepeg corn
1 medium red bell pepper, chopped
1 cup celery, peeled and chopped
1/2 cup (plus 1/4 cup) Italian salad dressing
1 cup mayonnaise
1/4 teaspoon pepper
1/2 cup mild cheddar, small chunks
1/2 cup Monterey Jack, small chunks
2 cans breast of chicken










Directions: Prepare rotini following package directions and drain in colander. Place in large bowl and toss with 1/2 cup dressing. Combine corn, pepper and celery. Mix 1/4 cup dressing with mayonnaise and pepper. Add to veggies and toss. Add this mixture to rotini and toss. Gently stir in cheese and chicken. Chill before serving.
