Sausage Casserole

Ingredients:
1 lb. smoked sausage, sliced
1 large onion, cut into short , thin strips
2 large green peppers, cut into short, thin strips
3 tablespoons vegetable oil
1 (16 oz.) can tomatoes and green chilies
2 (16 oz.) cans black-eyed peas, drained
1 package corn muffin mix
1/4 teaspoon ground cayenne pepper
2/3 cup milk
1 egg, beaten










Directions: In a large skillet over medium heat, cook sausage, onion and green pepper in 1 tablespoon oil until vegetables are tender and sausage is done. Stir in tomatoes and peas, reduce heat and simmer for 5 to 10 minutes. Pour into lightly sprayed 13x9 inch baking dish. In a small bowl, combine corn muffin mix, cayenne pepper, milk, egg and remaining 2 tablespoons of oil. Stir until smooth. Pour over sausage mixture. Bake at 400°F for 25 to 30 minutes or until golden brown.
