Apricot Bars

Ingredients:
3/4 cup margarine
1 cup sugar
1 egg
1-1/3 cup coconut
1/2 teaspoon vanilla
2 cups flour
1/4 teaspoon baking powder
1/2 cup nuts, chopped
1 (12 oz.) jar apricot preserves
1/2 cup dried apricots, diced










Directions: Cream margarine and sugar. Add egg, mix well. Combine flour and baking powder and add to margarine mixture. Add coconut, nuts and vanilla, mix well. Press 2/3 of dough into a 9x12 inch pan. Cook apricots in microwave for 4 minutes with 1/2 cup water added to them. Spread preserves and the dried apricots over dough. Drop remaining dough by teaspoons over the preserves and spread. Bake at 375° F for 20 to 25 minutes.
