1 (3 oz.) package cream cheese, softened
1/2 cup margarine, softened
1 cup all purpose flour
1/4 teaspoon salt
3/4 tablespoon margarine, melted
1 teaspoon vanilla
2/3 cup pecans, chopped
Directions: In a mixing bowl beat cream cheese and margarine. Blend in flour and salt. Chill for 1 hour. Shape into 1 inch balls. Press into the bottom and up sides of greased mini muffin cups. To prepare filling beat egg in a small mixing bowl. Add brown sugar, margarine and vanilla, mix well. Stir in pecans. Spoon into unbaked shells. Bake at 325°F for 25 to 30 minutes. Cool in pan. Yields about 20.
