Ingredients:
8 red salad potatoes
1/2 cup onion, chopped
2 tablespoons parsley, chopped
1 (11 oz.) can cheddar cheese soup
1/2 cup mayonnaise
1/2 cup plain yogurt
4 oz. bacon, cooked, drained and crumbled
paprika for garnish

Directions: Peel potatoes, boil until soft. Cut in 1-1/2 inch chunks. Spread potatoes evenly over bottom of 13x9x2 inch baking pan. Combine onions, parsley, soup, mayonnaise, and yogurt, pour over potatoes. Sprinkle cooked bacon on top, garnish with paprika. Cover with aluminum foil and bake at 350°F for 1 hour, uncovering during the last 30 minutes. Yields 10 to 12 servings.
