Mom's Meatloaf
Chef:  Maudie Burden - Centerview, MO          Category:  Main Dishes

Ingredients:
1/2 cup onion, diced
1/2 cup green pepper, diced
1/2 teaspoon hot sauce
2 teaspoons dry oregano
1 teaspoon garlic powder
2 teaspoons black pepper
1 lb. ground round beef
4 egg whites












Directions: In a non-stick skillet over medium heat, simmer onion, green pepper, oregano, garlic powder,pepper and hot sauce in 1/2 cup water until vegetables are tender, drain and mix by hand with beef and egg whites. Transfer to small loaf pan or casserole dish and bake in a preheated 400°F oven until no longer pink in the middle, 20-30 minutes.
