1 dozen eggs, beaten
1 medium onion, chopped
1 green bell pepper, chopped
1 (11 oz.) can corn niblets, drained
1 (7 oz.) can mushrooms, drained and chopped
1-1/2 cups milk
1/2 lb. sausage, browned and drained
2 dashes Mrs. Dash seasoning
1/2 teaspoon salt
Directions: Saute onion, bell pepper and mushrooms until translucent, drain excess oil and set aside. Brown sausage, drain excess oil and set aside. Add milk, salt and Mrs. Dash to eggs, beat until well mixed. Pour eggs into skillet and cook to about 3/4 done, then add all of above ingredients, finish cooking. Drain off excess liquid. This may be doubled, add sharp cheddar cheese if desired. Makes 6 servings.
Notes: I thought up this recipe with my Grandpa one Sunday morning while my Mom and Dad were doing chores.
