1 (18.25 oz.) box yellow cake mix
1/2 cup butter, softened
1/2 cup sugar
1/4 cup flour
2-1/2 cups dried apricots, chopped
1-1/2 cups almonds, sliced
3/4 cup apricot jam, melted
Directions: Heat oven to 350°F. Grease 13x9 inch pan. In large bowl combine all crust ingredients, cake mix, butter and egg. Beat at low speed until crumbly. Press mixture firmly in bottom of greased pan. Bake at 350° F for 10 to 15 minutes or until edges are golden brown. In the same bowl, combine sugar and flour, mix well to make filling. Add 4 eggs and stir with spoon until well blended. Fold in apricots. Gently fold in the almonds. Remove pan from oven and pour apricot mixture evenly over partially baked crust. Return to oven and bake an additional 15 to 20 minutes or until filling is set. Remove from oven and gently brush with melted jam. Cool 45 minutes or until completely cooled before cutting into bars. Makes 24 bars.
Notes: These bars will keep well if placed in an air tight container and stored in a cool place. They are very pretty on a cookie plate and taste very good. One of our favorites.
