Sweet and Sour Chicken

Ingredients:
4 chicken breast halves, boneless and skinless
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup canola oil
1 cup orange juice
1/2 cup chili sauce
1/2 cup red pepper, chopped
1 teaspoon prepared mustard
1 teaspoon garlic salt
3 tablespoons soy sauce
1 tablespoon honey
1 can mandarin orange sections







Directions: Place flour, salt and pepper in a plastic bag. Add chicken and shake to coat well. Place canola oil in fry pan over medium high heat. Add chicken and brown on both sides, about 5 minutes. Remove chicken to 3 qt. casserole. Drain oil from fry pan and add orange juice, chili sauce, bell pepper, mustard, garlic salt, soy sauce and honey. Simmer, stirring about 5 minutes and pour over chicken, cover casserole with foil. Bake chicken at 350°F covered, for 55 minutes. Remove foil and top chicken with mandarin orange sections and additional orange juice if thinner sauce is desired. Return to oven and bake l0 minutes. Serve over rice. Makes 4 delicious servings.

Notes: I like to serve this with a green salad and garlic bread followed with frozen yogurt dessert
