1 (4 serving size) box macaroni & cheese
1 lb. ground beef
1 (37 oz.) jar spaghetti with mushroom sauce
1 (15 oz.) can chili with beans
6 to 8 stuffed sliced olives
1/2 teaspoon jalapeno peppers, snipped
1 (12 oz.) box cottage cheese
1 teaspoon dried parsley, oregano and basil
1 (16 oz.) package Mozzarella cheese, shredded
Directions: Cook macaroni and cheese according to box, brown ground beef and onion. Add meat mixture to spaghetti sauce, chili, olives and jalapeno peppers. Combine cottage cheese, parsley, oregano and basil and 1/2 of Mozzarella cheese. In a 2 qt. casserole, 1st layer 1/2 of spaghetti sauce mixture, 2nd layer 1/2 of macaroni mixture, 3rd layer all of the cottage cheese mixture, 4th layer remaining macaroni mixture, 5th layer remaining spaghetti sauce mixture. Top with remaining Mozzarella cheese. Bake till bubbly, about 20 to 30 minutes. Yields 8 servings.
Notes: Use plastic gloves when snipping the jalapeno peppers and keep hands away from face.
