Buttermilk Pineapple Sherbet

Ingredients:
3 cups sugar
1 carton (equal to 4 eggs) Egg Beaters
1 (10 oz.) can evaporated milk
1 qt buttermilk
6 tablespoons lemon juice
1 (20 oz.) can crushed pineapple in natural juice














Directions: In large mixer bowl, beat together the sugar, Egg Beaters, then add milk, buttermilk (to freezer line), crushed pineapple with juice, and lemon juice. Pour into container for 1 gallon freezer and freeze in usual manner.

Notes: This is better if allowed to age for a day before serving. It keeps very well in freezer.
