2-3 tablespoons olive oil
4 cups potatoes, thinly sliced with skins
1-1/2 cups onions, thinly sliced
2 cups red, yellow and green bell peppers, cut in thin strips
1 tablespoon garlic, chopped
1 (15-1/2 oz.) can whole kernel corn
salt and pepper to taste
Directions: In large skillet, fry potatoes in olive oil until
brown and crispy. In a second skillet saute onion, peppers and garlic until tender. Add sausage and corn and cook an additional 3 to 4 minutes, then add to potatoes and fry another 3 to 4 minutes.
Notes: My guys really like this filling meal. I serve
it with a garden salad and homemade biscuits.
