1/4 cup margarine
1 cup onions, chopped
4 cups freshly cooked rice
2 cups sour cream
1 cup small curd cottage cheese
2 (4 oz.) cans green chilies, chopped
2 cups cheddar cheese, grated
salt and pepper to taste
Directions: Saute onion in margarine until golden. Remove from heat and stir in hot cooked rice. Add sour cream, cottage cheese, salt and pepper and toss lightly. In a greased 2 quart baking dish, layer with rice mixture, green chilies, cheese, then repeat. Bake at 375°F uncovered until hot and bubbly.
Notes: This recipe can be frozen and baked later. It is one of our family favorites that I use for almost every family gathering.
