Ingredients:
1 cup plain yogurt
2 grated carrots
2 diced green peppers
1 clove chopped garlic
1/2 teaspoon salt (optional)
1/2 teaspoon black pepper
2 cups corn (cooked or canned)
2 tablespoons lemon juice
4 sprigs parsley or celery

Directions: Place yogurt, carrots, peppers, garlic, salt and pepper in a large mixer bowl. Mix thoroughly. Add corn and lemon juice. Toss lightly. Chill. Serve in 4 chilled dessert bowls with main meal. Garnish with parsley or celery.
Notes: It's tasty, easy and may be prepared ahead of time.
