Mississippi Vegetable Casserole

Ingredients:
16 oz. package frozen mixed vegetables, cooked and drained
1 cup onion, chopped
1 cup celery, chopped
1 cup water chestnuts, sliced
1 cup mayonnaise
1 cup grated cheddar cheese
35 Ritz crackers, crushed
1/2 cup melted butter.












Directions: Pour ingredients into a casserole dish, top with crackers crushed and mixed with melted butter. Bake 350°F for 35 minutes.

Notes: On Easter I served this casserole and my granddaughter who does not eat vegetables ate 3 servings and asked for the recipe.
