Mexican Casserole

Ingredients:
2 lbs. ground beef
1 (4 oz.) can chopped green chiles
1 (medium) onion
1 teaspoon salt
1 can mushroom soup
1 can enchilada sauce (mild)
1/2 dozen corn tortillas
1/2 lb. diced processed American cheese
1 cup grated mild Cheddar cheese (optional)











Directions: In a medium sauce pan, over a low heat, mix soup with a 1/3 can of water, cheese and green chiles. Melt together set aside. In skillet, brown beef and onion. Pour off accumulated grease. Add enchilada sauce, and salt, simmer. Line bottom of casserole dish with quartered tortillas, and layer meat mixture, then soup mixture, repeat, ending with soup. Bake 1 hour uncovered at 300°F. Cover with foil if it becomes brown too soon. Garnish with grated cheese.
