Ingredients:
1 lb. ground beef
1 (medium) chopped onion
1/2 cup uncooked rice
1 (small) head cabbage (chopped into 1 inch pieces)
2 cups tomato juice
1 teaspoon salt
2 cups water
1 cube beef bouillon

Directions: Spread half of the shredded cabbage in a 9x12 inch casserole dish, sprayed with cooking spray. Brown beef, add onion, rice, salt and pepper for about 10 minutes over moderate heat. Spoon meat mixture over cabbage. Top with remaining cabbage. Heat tomato juice with water and bouillon cube until boiling. Pour over cabbage mixture. Cover and bake at 350°F for one hour or until cabbage is tender and rice is soft.
