Steak Roll

Ingredients:
2 round steaks (totaling 3 lbs.)
1/4 lb. sliced mushrooms
1 (medium) thinly sliced onion
1 jar chopped pimento
bread crumbs
1/2 cup melted butter
1 tablespoon boiling water
1 beaten egg
stuffed olives
1/4 cup butter or bacon drippings
6 whole mushrooms
3 (small) onions
1 cup red wine
salt (to taste)
pepper (to taste)
paprika (to taste)




Directions: Pound steaks until thin. Rub with salt, pepper and plenty of paprika. Overlap steaks on board making one large steak. Spread with sliced mushrooms, thin layer of onions and a thin layer of pimento. Cover with finely rolled bread crumbs. With beater combine 1/2 cup butter, boiling water and egg. Immediately dribble over bread crumbs. Arrange stuffed olives on the long side of the steak. Begin to roll the meat around the olives. Tie roll firmly. Dust flour on outside of roll. Brown in 1/4 cup butter in roaster pan. Place whole mushrooms and onions in roaster with meat roll. Sprinkle all lightly with salt, pepper and paprika. Add 1 cup red wine. Cover roaster and bake in 350°F oven for 2 hours. Cut in thick slices.
