Ingredients:
8 1/2 slices bacon
1/4 cup chopped green onion
1 can hominy (drained)
4 beaten eggs
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dry parsley

Directions: Fry bacon until crisp. Drain on paper towels. Saute green onion and hominy. Mix beaten eggs, salt, pepper and parsley together. Add eggs in with hominy and scramble. Add crumbled bacon and serve.
