Hot Tamale Pie

Ingredients:
3 cups boiling water
1 cup yellow cornmeal
1 1/2 lbs. ground beef
2 tablespoons cooking fat
1 chopped onion chopped (or some garlic, or both)
2 chopped green peppers
2 cups canned tomatoes
1 can whole kernel corn
sliced black olives
1 tablespoon chili powder
salt (to taste)









Directions: Brown ground beef, onion and green pepper in hot fat. Pour off fat. Add tomatoes, corn, olives and seasonings to meat mixture. Oil a 9x13 inch pan. Alternate layers of meat mixture and cornmeal, starting with meat and topping with cornmeal. Sprinkle top with parsley flakes and shredded cheese. Bake 400°F for 30 minutes.
