3/4 pound ground turkey or chicken
1/2 cup chopped onion
1/4 cup grated parmesan cheese
1/4 cup chopped parsley
3/4 teaspoon dried oregano
2 1/2 cups (26 oz.jar) fat-free or low-fat marinara sauce with mushrooms
3/4 pound spaghettini or spaghetti
Directions: Combine poultry, onion, parmesan, 3 tablespoons parsley and oregano. Shape into 20 balls and place on a rack. Broil 3 inches from heat until well browned, truning as needed. Meanwhile heat the marinara sauce to a simmer stirring occasionally. Reduce heat; add meatballs and simmer, for 5 minutes to blend flavores. Meanwhile, cook pasta until barely tender. Drain pasta, spoon sauce on top and sprinkle with remaining chopped parsley and a few parsley spears. Makes 4 servings.
