1 well-trimmed beef chuck 7-bone steak (center chuck stead, cut 3/4 to 1 inch thick (about 2 pounds)
Sauce & Marinade: 1 cup onion, finely chopped
1 cup ketchup
1/3 cup brown sugar, packed
1/3 cup red wine vinegar
1 tablespoon Worcestershire sauce
1/8 to 1/4 teaspoon crushed red pepper
Directions: Combine ingredients for suace an marinade in medium bowl; mix well. Place beef steak and 1 cup of marinade in food-safe plastic bag, turning to coat. Close bag securely and marinate in refrigerator for 6 to 8 hous or as long as overnight truning occasionaly. Cover and refrigerate remaining marinade for sauce. Remove steak from marinade; dicscard marinade. Place steak on grid over medium, ash-coverd coals. Grill, uncoverd 15 to 18 minutes for medium rare to medium doneness, turning once. Meanhwhile in small saucpean, bring reserved sauce to a boil. Reduce heat and simmer 10 to 15 minutes or until desired consistency is reached. Trim fat from steak; remove bones. Carve beef into serving size pieces; serve with sauce.
