Breakfast in a Bowl

4 cups water or skim milk
2 cups quick oatmeal
4 eggs, beaten
2 cups applesauce
1/2 cup brown sugar
1 teaspoon orange zest
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt (optional)

Directions: In medium saucepan bring water or milk to boil, add oatmeal. Stir often until oats are cooked. Add eggs gradually while mixing. Cook for 2 minutes. Add applesauce, brown sugar, orange zest, cinnamon, nutmeg and salt. Blend. Serve immediately, or keep warm and serve later. Serves 4.

Notes: This recipe was developed over the years for my five kids.
