5 lbs. beef brisket
1 1/2 oz. liquid smoke
salt and pepper
Directions: Pour liquid smoke over brisket in a large pan. Sprinkle on both sides with dry mustard, celery, garlic, and onion salt. Wrap in aluminum foil and refrigerate overnight. In the morning, sprinkle with salt and pepper, Worcestershire sauce and bake fat side up, wrapped in foil. Bake 4 hours at 275°F. Uncover and pour barbecue sauce over top, cover and bake at 350°F for 1 hour. Let cool in own juices. Serve warm or cold. Slice thin across grain of meat.
Notes: This brisket is delicious. Sprinkle seasoning liberally over meat for best flavor.
