1 stick (8 tablespoons) butter or margarine
1 1/2 cup brown sugar
1 cup buttermilk, or sour cream or sour milk
1 teaspoon vanilla or lemon extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
grated peel of lemon or lime, optional
1 1/2 cups thinly sliced
1/4 cup granulated sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
Directions: Preheat oven to 375F and grease bottom of baking pan. Cream butter and sugar together. Beat in egg, buttermilk and extract. Stir together the flour, baking powder, baking soda, salt and grated peel. Stir in rhubarb and then combine with the other ingredients. Pour into pan and sprinkle with topping. Bake 35 minutes or until it tests done.
Notes: If you bake this in a bread pan make only half of the topping - or none at all.
