Ranch House Bread Pudding

Ingredients:
3 cups soft bread cubes
6 tablespoons butter or margarine
6 medium apples, peeled and sliced
1/2 cup crunchy peanut butter
3/4 cup packed brown sugar
1 tablespoon lemon juice
1/2 cup orange juice
1 teaspoon grated orange rind
1 teaspoon cinnamon
1/2 cup raisins
1/3 cup peanuts, chopped
1/2 cup hot water








Directions: Preheat oven to 375F. Melt butter in oven-safe skillet. Add bread cubes and stir to brown lightly. Throughly blend peanut butter and brown sugar. Stir in fruit juces, garated rind and cinnamon. Remove 2/3 of the browned bread cubes from the skillet and scatter half of the apple slices and half of the raisins over the remaing bread, then spread half of the peanut butter mixture over the apples. Continue with the second layer of bread, then the apples, etc. End with bread cubes. Sprinkle with chopped peanuts, hot water and cinnamon. Bake 30 to 45 minutes, until apples are soft and flavors well blended. Serve with cream or Lemon Nutmeg Sauce. Makes 8 to 10 servings.
