1 (16 oz.) package cream cheese
1 (8 oz.) can crushed pineapple, well drained
1 small finely chopped green bell pepper
1/2 teaspoon seasoned salt
2 cups shredded Cheddar cheese
1 (small) finely minced onion
1/4 to 1/2 teaspoon cayenne pepper
Directions: Let cream cheese and Cheddar cheese set out at room temperature until soft. Beat cheese together until smooth and creamy. Add crushed pineapple, onion, green pepper, cayenne pepper, seasoned salt, and a few of the chopped pecans. Mix well. Refrigerate until firm enough to form into one or two cheese balls or cheese logs. Roll in additional chopped pecans. Refrigerate until ready to serve with your favorite chips or crackers.
