Sausage and Rice Special

Ingredients:
1 pound pork sausage, regular or hot
3 cups cooked rice
1 (small) onion, chopped
1/2 cup carrots, sliced or grated
1/2 cup celery, sliced
1/2 cup mushrooms, sliced
1/2 cup sugar snap beans
1/2 cup bell pepper, chopped
2 to 3 tablespoons soy sauce
2 eggs, slightly beaten
2 to 3 tablespoons milk









Directions: In skillet, cook sausage, set aside. Prepare 3 cups cooked rice according to package directions, set aside. In stir-fry pan cook vegetables. Add sausage and rice to the vegetables. Add soy sauce, eggs, milk to mixture and heat thoroughly, stirring constantly.

Notes: For variety, add or leave out some of the vegetables. Broccoli is also good.
