2 pounds cubed beef
1 tablespoon vegetable oil
3 cups hot water
3 cubes beef bouillon cubes
1 (medium) onion, chopped
3 cans diced green chiles or 8 fresh roasted, peeled chopped green chiles
1 ( 8 oz. ) can chopped tomatoes
1 teaspoon salt
1 can pinto beans or chili beans
1/4 teaspoon cumin
1/4 teaspoon oregano
1 clove garlic, minced
Directions: Brown meat and onions thoroughly in oil in heavy pot. Dissolve bouillon cubes in water. Add water to meat mixture. Cover pot and cook until meat is tender. When done, add remaining ingredients and simmer for at least 1 hour.
Notes: This stew always has a richer flavor after it's set a day.
