Ingredients:
3 cups white sugar
1 cup water
2 teaspoons baking soda
1 cup white syrup
4 cups raw peanuts
1 tablespoon butter
1 tablespoon vanilla
|
Directions: In large 8 quart heavy pan add sugar, water, and syrup. Stir well to dissolve until boiling and then let cook until you have a thread spinning from wooden spoon held up over pan. Cook on high heat all the way.
Add the butter, and raw peanuts gradually and keep stirring until this becomes a light brown. Remove from heat and add 1 tablespoon vanilla stirring in and then add the baking soda. Stir together quickly as it rises and stop stirring when all combined lightly and pour out on 2 well greased large cookie sheets. Do not spread out. Let cool and break apart, store in air tight container or sealed plastic bags.
Notes: Kent's Uncle Hubert taught him how to make this peanut brittle, which he makes each Christmas.
