KBC rolls out new ground beef school lunch recipes

Five new ground beef recipes that meet the revised USDA school lunch guidelines have been created by the beef checkoff program.

The Kansas Beef Council, along with beef councils in Colorado, Kentucky, Missouri and Washington, field-tested the new recipes with students and school foodservice staff this spring in elementary, middle and high schools.

KBC is encouraging Kansas school food service directors to try one of the new ground beef school lunch recipes at home this summer, and then add it to their school lunch rotation for the 2013-2014 school year. As an incentive, KBC is offering to reimburse these school menu developers for ground beef purchased to try one of the new recipes, up to $10, through Sept. 1.

The new school lunch recipes include: Spy Thai Beef, an Asian-themed ground beef mixture paired with fresh vegetables; Wrangler’s Beef Chili, a ground beef and bean chili with three variations; Sweet and Sloppy Joe, a sweet and spicy twist on the classic sandwich; Sweet Potato Beef Mash-Up, a Southwestern breakfast-for-lunch dish; and Rock-and-Roll Beef Wrap, containing beef, vegetables and grains.

KBC encourages livestock producers to try the family-sized recipes at home and share the foodservice recipes with local K-12 menu planners. All the recipes can be found on www.kansasbeef.org.
