Western Missouri dairy adds cheeseOSBORN, Mo. (AP)--A western Missouri dairy is adding a new product to its lineup. The St. Joseph News Press reports that making cheese will help Shatto Milk Co., in Osborn, with one of its biggest problems. The dairy had added some cows in July whose milk will be used to make eggnog. But until the eggnog business kicked into gear, the dairy had excess milk. The Midwest Dairy Association says more than 10 pounds of milk go into one pound of cheese. LeRoy Shatto says cheese improves with age, and the dairy doesn't have to worry about shelf life. Because of the product expansion, the farm is adding a building with room for making cheese, butter and ice cream. It will provide extra storage and give visitors a special treat.
