Scott Community College earns top honors at beef culinary contestIowa Scott Community College took "Best Overall Beef Presentation" honors at the Reinhart Inter-Collegiate Beef Culinary Competition in Iowa City. Their winning presentation was themed "European Infusion" and Beef Tri Tip was the centerpiece of their entry. The annual Reinhart Inter-Collegiate Beef Culinary Contest is co-sponsored by the Iowa Beef Industry Council and Reinhart Foodservice. Teams compete for cash prizes to be used for culinary scholarships and equipment needs and allows future chefs to showcase their culinary talent and creativity, according to Michelle Baumhover, IBIC Director of Consumer Promotion. "Teams were asked to create a fine dining experience that includes a beef appetizer and beef entrée using the Beef Tri-Tip. The creative recipes and appetizing presentation the teams come up with is always amazing," said Baumhover. Chef Brad Scott coached the winning team from SCC and said the competition gives the students the chance to cook under pressure and learn about working as a team in the kitchen. "This competition is really about coming together as a team to put forth the best dining experience possible. It is a great hands-on exercise in timing, teamwork and presentation," said Scott. Winning team members include: Brad Gomez and Lisa Lema of Bettendorf, Iowa and Chris Brobson, Amber Allen and Greg Daack all of Rock Island, Illinois. Their entry included Braised Beef Carbonnade with Belgium Cabbage and German Potato Cake for the main entrée. The Iowa Culinary Institute at Des Moines Area Community College was awarded Best Beef Entrée with their Circular Tri Tip with Duchess Potatoes, Vegetable Medley, Pinot Noir Reduction and Horseradish entry. Chef Darrin Miller, instructor at DMACC, coached the team. Mike Leonard of Ankeny, Iowa, Jesse Pelican and Seabastian Beumer of Des Moines, Kevin Terrell of Peterson and Matt Drennan of Ames were members of the DMACC student culinary team. The Kirkwood Community College team of T. Luke Peters of Cedar Rapids, Iowa, Jeremy Benda of Urbana, Md., Noah Bowles of Panora, Eric Ehlers of Holstein and Jason Finney of Cedar Rapids won the best beef appetizer category with their Deconstructed Philly Cheese Steak. The team was coached by Melanie Ewalt.
